Falafel is one of the pillars of Levantine cuisine. At Layali Beyrouth, a family restaurant open since May 2010, every fritter is shaped by hand. The chickpeas soak at length before being finely ground with flat-leaf parsley, coriander, onion, garlic, cumin and ground coriander. The mixture is then spooned into shape and dropped into hot oil at the moment of service.

In the Lebanese tradition, falafel is never eaten alone. It comes with an assortment of cold and hot mezze that balance flavours and textures: creamy hummus, parsley tabbouleh, smoky aubergine mtabbal, crunchy fattoush, then kibbeh, sambousek and fatayer on the hot side.
