In Lebanon, a meal begins with sharing. For a balanced assortment, tradition suggests pairing a creamy purée, a fresh salad, a yoghurt-based mezze and a vegetable preparation. In Lyon, our guests love to combine hummus, tabbouleh, garlic labneh and monk's salad to explore this palette of flavours before the grills.

Among our cold mezze, hummus holds pride of place. The chickpeas are worked with fresh tahini, lifted with lemon and olive oil, for a creamy, fragrant purée. Plated into a dome and drizzled with oil, it is enjoyed with Lebanese bread and opens the meal in the purest Beirut tradition.
It is rarely eaten alone: alongside a tabbouleh, a smoky moutabal or a fresh labneh, enjoyed in our dining room at 38 rue du Dauphiné, as takeaway with Click & Collect or delivered in Lyon via Uber Eats and Deliveroo.
On our menu, baba ganoush goes by its Lebanese name, moutabal: aubergines grilled until the skin takes on a smoky taste, then blended into a smooth cream bound with sesame paste, lifted with fresh garlic and a drizzle of olive oil. It is that smoky aroma, drawn from cooking the skin, that sets a true baba ganoush apart from a plain aubergine purée.
