In Lebanon, baklava is never served alone. It closes a meal made for sharing, brought to the table with coffee or tea, often within an assortment of sweets. It is as much an everyday dessert as a festive one, picked at together and drawn out in conversation.

Pistachio baklava, layer by layer

Among our sweets, baklava holds pride of place. Everything comes down to the layering: filo sheets so thin they turn translucent, brushed with butter one by one, then stacked around a filling of chopped nuts. After baking, a fragrant syrup is poured over the still-warm pastry: it seeps into the layers and creates that unique contrast between crisp and melting.
